Put the flours and salt on a deep pot. Separately melt the yeast with the hot water. Make a space on the bottom of the flour and put the yeast, milk, egg and butter in it and knead the dough until it is either wet or dry. (In Turkey we say that the dough is done if it feels like the earlobe). Make it rest for half and hour.

In the meantime prepare the filling. I'm going to explain here the chopped meat topping since it is the hardest:

Put a little bit of butter into a pan then put the meat. Stir it until the meat turns brown. If you want you can put some tomato juice(half a glass) and 1 chopped pepper in it. When the tomato juice is cooked enough, let it cool down.

Preheat the oven to 400 F.

Make 10 balls out of the rool. Roll the made dough almost diamond-shaped. Put the filling in the middle and put the grated cheese on top. Roll the edges of the pita until the place of the filling so it is almost entirely covered. (Leave a small place open). Put some yolk on the dough to make it crusty.

Put it on the oven and let it bake approximately 30-40 minutes until the top is crusty.

Tip: Spread some olive oil when you get it out of the oven to prevent dryness.
