Filling
1 tablespoon butter
1 cup sliced mushrooms
1/2 cup onion, thinly sliced
1 tablespoon flour
2 cups cooked salmon, flaked
1/2 cup cream cheese
2 tablespoons fresh chives, chopped
Custard
2 cups half-and-half
4 eggs
1/2 teaspoon salt
1 pinch cayenne
1/2 cup grated parmesan cheese

Preheat oven to 325.

Prepare filling: Heat butter and saute onion and mushrooms. Stir in flour and combine well. Remove pan from heat.
