Roasted Quail

   Wipe birds with damp cloth.

   Rub generously with butter, salt and pepper, inside and out.

   Brown in very hot oven, 450u00b0 to 500u00b0 for 5 minutes.

   Reduce heat to 350u00b0; add a little chicken broth and steam 20 to 25 minutes.

   The steaming keeps birds moist and helps hold flavor.
