1 Tablespoon Olive Oil
1 Tablespoon Unsalted Butter
2 Jalapeno Peppers
1/2 Sweet Onion, Diced
2 cloves Garlic, Minced

⅛ teaspoons Pepper
1- 1/2 cup Half-and-Half, Divided
1 Tablespoon Cornstarch
16 ounces, weight Sharp, White Cheddar Cheese, Freshly Grated
8 ounces, weight Monterey Jack Cheese, Freshly Grated
Fresh Cilantro, For Topping
Chopped Tomatoes, For Topping
Sliced Jalapenos, For Topping
