3 1/2 ounces couscous
8 3/4 ounces ground pork
1 medium carrot coarsely grated
1/2 cup cilantro leaves fresh, chopped
1 clove garlic minced
1/3 cup olive oil
10 1/2 ounces sweet potatoes peeled, cut into 3/4 inch cubes
2 ounces baby spinach
1/4 cup pine nuts toasted
2 1/2 ounces ricotta cheese crumbled
1 tablespoon lemon juice

Combine couscous with 1/2 cup boiling water. Cover with plastic wrap and set aside for 5 mins, or until liquid is absorbed. Using a fork, fluff and separate grains. Let cool then mix with ground pork, carrot, cilantro and garlic. Shape into 4 patties.

Heat 1/2 the oil in a frying pan over medium heat. Cook patties for 3 mins per side, or until browned and cooked through. Drain on paper towels.

Meanwhile, steam sweet potatoes for 5-6 mins, or until tender. Let cool slightly then mix with spinach, pine nuts, ricotta, lemon juice and remaining oil. Season.
