1 pound lean ground beef
2 tablespoons tomato paste
1 teaspoon ground cumin
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon pepper
2 Roma tomatoes peeled, seeded and chopped
1/2 cup pimiento stuffed green olives sliced
1/4 cup golden raisins
2 tablespoons flat leaf parsley chopped
6 flour tortillas 8-inch
1 cup manchego cheese shredded
1/2 cup sour cream

HEAT oil in large skillet over medium heat. Add onion, green pepper and garlic; saute 5 minutes. Add crumbled ground beef; cook about 10 minutes or until thoroughly cooked and crumbled.

STIR in tomato paste, cumin, salt, cinnamon and pepper; cook 5 minutes. Add tomatoes, olives, raisins and parsley; cook 5 minutes. Adjust seasonings if necessary.

HEAT tortillas, one at a time, in large dry skillet over medium heat, turning once. Place tortillas on serving plates. Top evenly with beef mixture. Sprinkle with cheese. Garnish with sour cream. Fold tortilla to form taco.
