   Put 3 cups sugar and milk into heavy saucepan. Bring to a boil.

   In heavy skillet (mother used a cast-iron skillet), add 1 cup sugar. Cook until caramelized, stirring constantly. Add hot syrup to caramelized mixture, stirring constantly. Add butter and cook until reaches soft ball stage (about 240u00b0).

   Remove from heat and beat until creamy.
