place bacon in cooking tray & cook in oven at 350 degrees until bacon is half cooked....bacon must still be soft not hard..!!

in bowl combine goat cheese, cream cheese & finely chopped scallions...mix well

Shrimp must be peeled, cleaned & cut open in the center.

with spoon place teaspoon portion of cheese/scallion mix into the cut of the shrimp...wrap tight with piece of half cooked bacon & seal with a toothpick....(toothpick should be soaked in water for 20 minutes)

cook on grill until shrimp turn color & are done....should only take couple of minutes on each side on medium flame!

* if desired you may add quarter teaspoon of cayenne pepper to cheese/scallion mix for lil spicy heat
