Pour hot water to depth of 1 inch into a large, shallow dish. Dip 1 rice paper sheet in hot water to soften, about 20 seconds.

Place softened rice paper on a flat surface. Place 2 lettuce leaves in center of rice paper; top with 1 oz. smoked salmon slices, 5 cucumber batons, 4 avocado slices, 6 radish slices, 1/2 tablespoon each of cilantro and basil, and about 1/2 tablespoon of Everything Bagel Seasoning. Fold sides over filling, and roll up, burrito style.

Place roll, seam side down, on a serving platter. Cover with damp paper towels to keep from drying out. Repeat procedure with remaining rice paper and filling ingredients, refreshing hot water as needed.

Stir together creme fraiche, lemon zest, and lemon juice. Serve with rolls.
