Preheat the oven to 300 F.

Microwave the potato for about 5 minutes on the potato setting and grease your baking dish with butter on the bottom and sides. I used a small, 2-serving size cassoulet.

Also cook your sausage patties in a skillet over medium heat for about 5 minutes (flip halfway through) while the potato is in the microwave.

When it's done, remove the potato from the microwave. Carefully slice the hot potato and mash it to the bottom of the dish.

Remove sausage from the pan, blot off any grease and crumble it into a bowl. Crack eggs and add them into the glass. Stir in cheese, Sriracha, garlic salt, and pepper. Mix everything up with a fork and pour it into the baking dish.

Bake for 30 minutes. Remove from oven. Garnish with scallions and serve hot.
