Pre heat oven 170 C (150C fan oven) gas mark 3

Line a 20 cm (8inch) baking tin with parchment paper and grease

Melt chocolate with butter in a heatproof bowl over a pan of gently simmering water until smooth .

Remove from heat and allow to cool slightly.

Mix the sugar, vanilla extract, cocoa powder, flour and eggs.

Then pour in melted chocolate and stir.

Turn the mix into the tin and smooth over with back of spoon.

Break up remaining chocolate and sprinkle over top.

place in centre of oven and cook for around 1 1/4 hours until set to centre on surface but soft underneath.

Do not over cook or the soft gooey centre will spoil .

Leave to cool for 2 hours then turn out onto a chopping board and cut up into slices.serve cold or slightly warm with ice cream
