Add baking soda mixture and stir to combine. Cover with plastic wrap and chill 30 mins.

Spread sugar on a large plate. Roll tablespoons of dough into balls, then roll in sugar. Place on prepared baking sheets, 2 inches apart, and press slightly to flatten. Bake, switching position of the baking sheets halfway through, 15-20 mins or until tops of cookies begin to crack. Cool completely on baking sheets and serve.
