Ingredients: 3/4 lb beef or possibly turkey; 1 c. minced onion; 1 1/2 c. diced green pepper; 4 x chopped clv garlic; 2 tsp Cumin; 1 can Black Beans; 1 can Chipotle Chiles (obtain from a Mexican foods store if not available elsewhere. Preferably get Chipotles canned in with the Adobo Sauce.); 8 ounce can of stewed tomatoes; 2 tsp Adobo Sauce. (again, obtain from a Mexican foods store if not available elsewhere.); 4 ounce Cheddar Cheese (grated); 1/2 c. minced fresh Cilantro; 1 box cornbread mix -ex: Jiffy (make into cornbread batter, set aside)

3/4 lb beef or possibly turkey
1 c. minced onion
1 1/2 c. diced green pepper
4 x chopped clv garlic
2 tsp Cumin
1 can Black Beans
1 can Chipotle Chiles (obtain from a Mexican foods store if not available elsewhere. Preferably get Chipotles canned in with the Adobo Sauce.)
8 ounce can of stewed tomatoes
2 tsp Adobo Sauce. (again, obtain from a Mexican foods store if not available elsewhere.)
4 ounce Cheddar Cheese (grated)
1/2 c. minced fresh Cilantro
1 box cornbread mix -ex: Jiffy (make into cornbread batter, set aside)

If you can't find Chipotle sauce substitute with Warm Salsa and Rotel's chilis & tomatoes in a can.

Brown and saute/fry meat, onions, pepper and garlic on the stove in a large pot.

Add in Cumin.

Add in beans, tomatoes and chilis, and Adobo sauce.

Saute/fry for 5 min.

Remove from heat.

Pour into a glass baking (qt and a half approximately at least) pan.
