Heat oven to 450.

Heat fry pan to Medium, saute in butter the vegetables and ham. Set aside

Mix the eggs, cream and salt and pepper.

Heat a small omelette pan to medium. Add 2 Tblsp butter to melt. Add 1/2 cup egg mixture and mix gently as for scrambled eggs. Once it has set, spread the scrambled egg evenly over bottom of pan, and pour another 1/3 cup of eggs in, to fill in the spaces. Sprinkle 1/5 of the meat/vegetable filling over the surface. 1/5 the cheeses, then transfer the pan to the hot oven for 1.5 minutes. Pull out, and after making sure that the edges are not stuck, slide onto a ready plate, making the omelette to fold in half as you are sliding it on the plate. Serve with warm toast and fresh orange juice!
