Ingredients: 4 eggs; 1 c. brown sugar; 3/4 c. vegetable oil; 3 c. flour; 1 1/2 tsp. soda; 3/4 tsp. each: baking powder and salt; 2 tsp. cinnamon; 2 c. grated zucchini; 1 c. chopped walnuts; 1 tsp. vanilla

Beat eggs; mix with sugar, oil and vanilla.

Stir together flour, soda, baking powder, salt and cinnamon.

Mix egg mixture and flour mixture together.

Stir in zucchini and walnuts.

Pour into 2 greased and floured bread pans.

Bake at 350u00b0 for 50 minutes.

Let stand 10 minutes after baking, then remove from pan.
