1 c. sharp Cheddar cheese, shredded
4 c. sliced zucchini (peeling optional)
1 c. uncooked instant rice
1/2 tsp. salt
1/8 tsp. pepper
1 Tbsp. oil

Brown meat and onion in oil.

Stir a few minutes. Drain off excess grease.

Layer in a 9 x 13-inch casserole half the sliced zucchini, all of the meat mixture, cottage cheese, remainder of zucchini, soup and grated cheese. Bake at 350u00b0 for 40 minutes or longer.
