Ingredients: 4 large round white potatoes, scrubbed; 1 small yellow onion, finely minced; 1 lb. lobster meat, freshly cooked; 1 c. dry white wine; 1/4 c. sour cream; 1/3 c. heavy cream; 1/3 c. Jarlsberg cheese, grated; 1/2 Tbsp. butter; 1 scallion, diced; salt and pepper to taste

4 large round white potatoes, scrubbed
1 small yellow onion, finely minced
1 lb. lobster meat, freshly cooked
1 c. dry white wine
1/4 c. sour cream
1/3 c. heavy cream
1/3 c. Jarlsberg cheese, grated
1/2 Tbsp. butter
1 scallion, diced
salt and pepper to taste

Lightly coat potato skins with a small amount of olive oil and bake at 375u00b0 for an hour.

Let cool, then cut in half and scoop out pulp into mixing bowl.

Melt the butter in a saute pan and add the onion with a dash of salt and pepper.
