Ingredients: 2 tablespoons olive oil; 2 onions, chopped King Sooper's 1 lb For $0.99 thru 02/09; 500g chicken thigh fillets, chopped into 2cm cubes; 4 cloves garlic, crushed; 500g white beans, cannelini or navy, soaked overnight in cold water; 4 large carrots, roughly chopped; 5 cups chicken stock; 5 cups water; 2 tablespoons VEGEMITE; 1 bay leaf; 1 teaspoon finely chopped rosemary; 500g Polish sausage, cut into 5mm slices; 500g green cabbage, shredded; salt and pepper, to taste; olive oil

2 tablespoons olive oil

500g chicken thigh fillets, chopped into 2cm cubes
4 cloves garlic, crushed
500g white beans, cannelini or navy, soaked overnight in cold water
4 large carrots, roughly chopped
5 cups chicken stock
5 cups water
2 tablespoons VEGEMITE
1 bay leaf
1 teaspoon finely chopped rosemary
500g Polish sausage, cut into 5mm slices
500g green cabbage, shredded
salt and pepper, to taste

Heat half the oil in a large frying pan and saute the onions and garlic, stirring occasionally, until softened.

Transfer to slow cooker.

Heat remaining oil in the pan over medium-high heat, add chicken and cook for 4-5 minutes until browned.

Transfer chicken to slow cooker along with drained white beans, carrots, stock, water, Vegemite, bay leaf and rosemary.

Cover and cook on HIGH for 3-4 hours or LOW 6-8 hours until meat is tender.

Re-heat frying pan over medium-high heat and cook the sliced sausage for 1-2 minutes each side, until browned.

Remove and drain on paper towel.

Stir in sausage and cabbage for and cook a further 30 minutes on HIGH or until cabbage is tender.

Season soup and serve with crusty bread.
