1/2 cup sugar
1 pound watermelon pureed
1/4 cup lime juice
2 egg whites lightly whisked

1/4 cup vodka
1 tablespoon sugar
1 tablespoon lime juice
9 ounces strawberries finely chopped
1 Granny Smith apple cored, finely chopped
7 ounces pineapple finely diced

In a small saucepan, combine sugar and 1/2 cup water. Stir over a medium heat until sugar dissolves. Simmer for 6-8 mins, without stirring, until mixture is syrupy. Remove saucepan from heat and allow to cool completely.

Using a fine sieve, strain watermelon into a large bowl. Stir in syrup and juice. Fold in egg whites. Pour into an ice cream maker and process according to manufacturer's instructions.
