2 stalks celery, chopped
1/2 cup flour, all purpose
6 cups chicken stock, reduced sodium
3/4 teaspoon salt, to taste
1/8 teaspoon ground white pepper
2 cups cooked chicken, diced
1/2 cup half-and-half

In a large soup pot over medium heat, melt the butter.

Add the onions, carrots, and celery and saute' until tender, about 10 minutes.

Stir in flour and blend. Continue stirring for a minute, careful not to burn.
