Ingredients: 1 onion peeled and chopped; 15 ounces chopped tomatoes; 1 pound cherry tomatoes halved; 4 tablespoons olive oil; 6 tablespoons red wine vinegar; 1 teaspoon sugar; 1 zucchini sliced; 2 ounces pine nuts; 1 pound tortellini; 1/3 pound cooked ham cut into thin strips; 2 ounces arugula; 1/3 pound mozzarella torn into pieces, optional

1 onion peeled and chopped
15 ounces chopped tomatoes
1 pound cherry tomatoes halved
4 tablespoons olive oil
6 tablespoons red wine vinegar
1 teaspoon sugar
1 zucchini sliced
2 ounces pine nuts
1 pound tortellini
1/3 pound cooked ham cut into thin strips
2 ounces arugula
1/3 pound mozzarella torn into pieces, optional

For the tomato salad, mix the onion, chopped tomatoes, cherry tomatoes, 2 tbsp of the oil, red wine vinegar and sugar in a bowl. Season to taste with salt and freshly ground black pepper. Set aside.

Heat the remaining olive oil in a frying pan, add the zucchini and saute for 3 mins. Remove from the pan. Add the pine nuts and toast in the hot pan for 1-2 mins. Stir the zucchini and pine nuts into the tomato salad.

Cook the tortellini in salted, boiling water, according to the package instructions. Drain and rinse in cold water. Allow to cool. Top with the tomato salad, ham and arugula and scatter with the mozzarella, if using.
