Heat oil in a large saucepan over medium heat. Cook onion and garlic for 5 mins, or until soft. Add tomato sauce, salt, brown sugar, paprika, vinegar, mustard and Worcestershire sauce. Simmer for 15 mins, stirring occasionally.

Preheat oven to 325u00b0F. Coat each rack with 2 tbsp dry rub then wrap up tightly in 2 layers of foil. Transfer to a baking sheet and bake for 1 hour. Baste with sauce and bake for another 1 hour. Baste again and bake for 1 hour 30 mins.

Preheat grill. Unwrap racks and grill for 10 mins. Flip over and brush with sauce. Grill for another 10 mins. Let rest for 10 mins then brush with more sauce before serving. Garnish with celery, radishes and fresh herbs.
