2 tablespoons vegetable oil
1/2 cup pearl onions, quartered
2 garlic cloves, sliced
1 teaspoon jalapeno chile, diced
1 cup sweet corn
1/2 cup edamame, cooked and shelled
1 red bell pepper, roasted, diced
1 cup cherry tomatoes, halved
Salt and pepper to taste
2 tablespoons red wine vinegar
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 cup okra, halved, charred on grill
Lemon zest, for garnish

In large saute pan, heat vegetable oil over medium-high heat. Add sausage and sear until browned. Remove and reserve. (Alternatively, grill sausage for different flavor profile.)
