2 tbsp vegetable oil

Preheat oven to 450u00b0F. Season and sprinkle pork roast with garlic powder and onion powder. Roast for 10 mins. Reduce heat to 325u00b0F and roast for 1 hour.

Meanwhile, whisk together pineapple preserves, oyster sauce, rice vinegar, brown sugar and garlic. Brush 1/2 of the glaze over pork and roast until a thermometer inserted in the thickest part reads 145u00b0F. Remove from oven and let rest for 20 mins.

Blanch broccoli in boiling salted water for 2 mins. Drain.

Heat oil in a large frying pan over medium heat. Add vegetables and stir-fry for 3 mins. Add remaining glaze and toss to coat. Serve with roast pork, garnished with pineapple wedges and candied ginger.
