Super Spud Potato Bake

   Preheat oven to 450 F. Prick potatoes several times with a fork and rub them with olive oil.

   Set them on a baking tray.

   Bake potatoes for 45 minutes or until fork tender.

   Or you can boil them for 20 minutes or until fork tender, but not too soft.

   Set oven to 350 F when you remove potatoes from oven.

   In a large skillet over medium heat, fry bacon until crisp then remove from grease to a paper towel lined plate.

   Dice the onion then cook it in the bacon grease until translucent.

   Drain onions and set aside.

   Cut cooked potatoes into cubes or chunks.

    In a 9X13 casserole dish, layer potatoes, onions, chunks of butter, crumbled bacon and cheese to your liking.

    Top with a layer of cheese.

    Bake at 350 F until cheddar is melted and bubbly.
