Heat butter and oil in pan.

Add diced pancetta and cook until golden brown

Add diced celery, diced onion, diced carrot,garlic and thyme to pancetta and cook until veg are tender (about 10 mins) salt and pepper to taste.

While cooking pancetta and veg, decase the chorezo and dice small.

After veg and pancetta are done cooking add diced chorezo and cook 5 mins.

Take off heat and let cool while to prep your mushrooms.

Take stems off of mush and clean with damp papertowel.

Add cream cheese to pancetta, chorizo and veg mixture and mix until combined (taste for seasoning at this point and salt and pepper to taste).

Preheat oven to 400 and begin stuffing your mushrooms.

Once mushrooms are stuffed add to the 400 oven and cook for 20-25 mins.

Take out of oven let cool for 5-10 mins then enjoy!
