Ingredients: 2 servings Prepared udon noodles; 200 grams Mixed ground beef and pork; 3 Fresh shiitake mushrooms; 1 Green bell pepper (large); 10 cm's worth Green onion (chopped); 2 tsp Ginger (finely chopped); 1 Red chilli pepper (sliced into rounds); 1 tsp Sesame oil; 1 tsp Vegetable oil; 250 ml Water; 1 1/2 tsp Chicken soup stock granules; 1 and 1/2 tablespoons Sake; 3 tbsp Mirin; 2 tbsp Red miso; 1/2 tsp Doubanjiang; 1 tsp Soy sauce; 2 tsp Tianmianjang bean sauce

2 servings Prepared udon noodles
200 grams Mixed ground beef and pork
3 Fresh shiitake mushrooms
1 Green bell pepper (large)
10 cm's worth Green onion (chopped)
2 tsp Ginger (finely chopped)
1 Red chilli pepper (sliced into rounds)
1 tsp Sesame oil
1 tsp Vegetable oil
250 ml Water
1 1/2 tsp Chicken soup stock granules
1 and 1/2 tablespoons Sake
3 tbsp Mirin
2 tbsp Red miso
1/2 tsp Doubanjiang
1 tsp Soy sauce
2 tsp Tianmianjang bean sauce

Stir-fry the chopped chili pepper, ginger and green onion in the sesame oil and vegetable oil.

Add the ground meat and stir-fry.

Add the shiitake mushrooms, coarsely chopped, and stir-fry as well.

Chop up the bell pepper and add to the pan and stir fry quickly.

Add the ingredients, bring to a boil and skim off the scum from the simmering surface.

Season with the ingredients.

Serve the sauce on the side with the cooked noodles.
