Preheat oven to 350.

Stir together peaches, cinnamon, cloves, ginger and 1 cup sugar. Set aside. (If your peaches are really big, only use 4 or 5. You want about 4 cups' worth.)

In a medium bowl, cream together shortening and remaining 1 cup sugar. Stir in flour, baking powder and salt alternately with milk. Mix until smooth.

Pour batter into a greased 8x11.5 baking dish (2 quart rectangle). Top with peach mixture.

Drop butter in boiling water and pour over peaches. Bake in preheated oven for 45-55 minutes until golden brown. Serve warm.

Note: The baking dish will be pretty full, so I usually put it in the oven before I pour on the boiling water...just to avoid spills.

If you don't like a lot of spices, you can leave out the ginger and cloves, and you will have a lovely classic peach cobbler.
