Smoky Sausage & Collard Green Stuffing

   Cook onions and greens in butter in large saucepot on medium-high heat 2 minutes, stirring occasionally.

   Add sausage, water and crushed red pepper; bring to boil.

   Reduce heat to medium-low; cover.

   Simmer 15 minutes.

   Remove from heat; stir in stuffing mix just until moistened.

   Transfer to 2 full-size hotel pans (or 1 half hotel pan for trial recipe).

   Hold on steam table up to 1-1/2 hours.
