In medium saucepan, heat 2 1/4 tsp vegetable oil until hot. Stir in 1/4 cup finely chopped onion, 1 clove minced garlic and 1/2 tsp jalapeno; saute for two minutes. Add remaining ingredients (1 cup ketchup, 1 cup water, 2 Tbs apple cider vinegar, 2 Tbs molasses, 2 Tbs honey, 2 Tbs light brown sugar, 1 Tbs balsamic vinegar, 1 Tbs soy sauce, 2 1/4 tsp blackening spice, 3/4 tsp black pepper), bring to a boil. Pre-heat oven to 375 degree F. Place 2 cups flour, 4 tsp baking powder, 1 tsp salt, 1 tsp sugar and 1/2 tsp baking soda in a large bowl. Cut in 1/4 cup cold butter and 1/4 cup solid vegetable shortening with a pastry blender, two knives or your fingers until mixture resemble small peas. Do not over-mix as the dough will be tough. Add 1 1/4 cup mashed sweet potatoes, 1 cup scallions and 1/2 cup buttermilk. Stir gently to combine. Place mixture on a floured surface; knead 4-5 times. Roll out to 1/2 inch thickness. Using a 2-inch round cookie cutter, cut out circles. Place on a baking sheet that has been coated with cooking spray. Bake for 12 minutes or until biscuits are golden brown. Brush 1/2 cup melted butter over baked biscuits. Makes 2 dozen biscuits."]
