1
Preheat the oven to 450 F.
-
2
Drizzle a pan with olive oil and stretch the dough out on it.
-
3
Drizzle (or brush) about a teaspoon of olive oil over the top of the dough, then sprinkle lightly with salt.
-
4
Set aside while you prepare the rest of the ingredients.
-
5
To prepare the sauce, first put all of the following into a heavy skillet: 1 1/2 cup diced tomatoes, 1 tablespoon butter, 1 teaspoon olive oil, and 1/2 cup diced mushrooms.
-
6
Turn the heat on to medium-high, and give it a stir, then add the dried oregano and basil.
-
7
Bring to a boil, then turn the heat down to medium-low and simmer for 5 minutes or so, stirring constantly.
-
8
After five minutes, you should have a nice thick base.
-
9
If you dont, continue to cook for another minute or two, until thickened.
-
10
Add in the cream and cook over medium-low heat until thickened (about 5 to 7 minutes), and season with salt and pepper to taste.
-
11
Remove pan from heat.
-
12
Spread the sauce over the dough and add the sliced mozzarella.
-
13
Bake for 10 to 12 minutes, until the crust is cooked through, browned on the bottom, and the cheese is melted.
-
14
While the pizza is cooking, prepare the shrimp: Dice the garlic.
-
15
Heat 1 tablespoon each of butter and olive oil over medium heat.
-
16
Once the butter is melted add the garlic.
-
17
Saute the garlic for a minute or two (just until its starting to turn color).
-
18
Then add the shrimp and lemon juice.
-
19
Cook, stirring frequently, until the shrimp turn pink and are cooked through.
-
20
This takes only 3 or 4 minutes depending on the size of the shrimp.
-
21
Remove pan from heat.
-
22
Top the (cooked) pizza with the shrimp, drizzle all of the butter/lemon/garlic sauce from the pan over the top evenly, and sprinkle with freshly chopped parsley.
