1 quart cream
1 head of garlic, split in half
7 egg yolks
2 tablespoons minced shallots
1/2 cup Cognac
Pinch of cayenne
2 pounds lobster meat, chopped

6 ounce whole lobster tail meat, cooked
2 whole lobster claws meat, cooked
4 fried spinach leaves
1 tablespoon finely chopped parsley
