Heat 1 tbsp oil in a separate saucepan and saute the remaining onions for 2 mins. Add the spinach, cover and cook until wilted. Season with salt and black pepper. Transfer to a colander and squeeze out gently, then roughly chop and combine with the Parmesan and sour cream.

Preheat the oven to 425u00b0F. Grease a 12-hole muffin pan with oil and sprinkle with breadcrumbs. On a lightly floured surface, roll out the dough to a 20 x 16 inch rectangle. Cut into 12 equal squares and lay in the holes. Layer with the tomato sauce, spinach mixture and sausage meat. Bake for 15-20 mins, until golden.
