1 each garlic clove, minced
8 each basil leaves, fresh
28 ounces tomatoes plum, canned
6 each potatoes cubed
1 pound sausage italian, turkey, cut into 2 inch pieces
1 x salt to taste
1 x black pepper to taste
1 x parsley leaves or basil, fresh, garnish

Fry bacon in a large non-stick saucepan until crisp.

Add carrot, celery, onion, garlic and basil.

Saute in pan drippings (or use braise/deglaze method) until onion is lightly browned.
