pre heat oven to 400

in a large pot, boil water for pasta (add one tablespoon of vegetable oil to water so pasta doesn't stick together)

In a large skillet or frying pan, cook sausage over medium heat until brown, turning once.

While the sausage is browning, chop the onion and peppers into bite size pieces.

when water boils, add pasta.

when sausage is cooked, remove from pan/skillet and place on a cutting board.

let it cool until its safe to handle.

add the peppers, onions, and can of diced tomatoes to frying pan.

add seasonings to taste.

I don't measure, but I guess I add about 1 or 2 tablespoons of each.

stir to blend all ingredients and cover

when the pasta is cooked, before draining set some of the starchy water aside for later, about one or two cups.

drain the pasta then put it back into its pot.

while the peppers/onion mixture is cooking, cut up the sausage about the same size as your peppers and place into the pot with the pasta.

stir these together so the pasta can absorb flavor from the sausage.

when the peppers are tender and the onions are translucent, pour everything into the pot with the pasta (this is why you need a large one).

mix all ingredients together to blend flavors.

if it seems a little dry, add some of the water you set aside earlier to moisten it.

pour all ingredients into a shallow baking dish (glass, metal, whatever you have on hand, just spray non-stick cooking spray on the bottom if you need to)

top with mozzarella chees and parmesan cheese and sprinkle a little bit of onion powder and garlic powder on top.

bake until the cheese is bubbly
