HALVE THE PASSIONFRUIT AND SCOOP OUT THE PULP. PRESS THE PULP THROUGH A STRAINER TO SEPARATE OUT THE SEEDS. DISCARD THE SEEDS. MIX THE PASSIONFRUIT JUICE WIT THE YUZU & HONEY. ADD MORE YUZU TO TASTE. ADD THE OLIVE OIL.

PLACE THE HALIBUT IN A GLASS DISH. THINLY SLICE THE GARLIC AND LAY OVER THE HALIBUT. SPOON ABOUT HALF OF THE PASSIONFRUIT SAUCE OVER THE TOP OF THE HALIBUT AND ROAST FOR ABOUT 10-12 MINUTES. COVER WITH FOIL AND CONTINUE COOKING FOR ANOTHER 4-5 MINUTES. NOTE: ROASTING TIME WILL VARY DEPENDING ON THE THICKNESS OF YOUR FISH, YOU WILL WANT TO CHECK FREQUENTLY SO THAT YOU DON'T OVER COOK THE FISH.
