Rice Salad

   Cook rice according to directions or use leftover rice.

   When cooled, mix in Miracle Whip, hard-boiled eggs, cut up radishes and cucumber.

   With the cucumber, I peel it, slice it longways and take out seeds, then cut up; looks like celery. This is so easy to make and it is a good substitute for potato salad.

   We love it. It is great in the summer with chicken, cold cuts, hot dogs, hamburgers, etc.
