1) Melt butter in 10-12 inch saucepan or enameled cast iron casserole. Add the onion celery and carrot, the sofrito, and cook stirring often until they are light brown.

3) Add the wine, bring it to a boil, stirring constantly, cooking until the wine almost evaporated. Add the milk and cook until the milk has almost evaporated.

4) Add the chopped tomato's and bring to a boil again. Reduce heat to low. Half cover the pan and simmer for 3 hours, stirring occasionally. Add the parsley.
