Preheat oven to 375 F. In a large bowl mix together the pumpkin, sugar, brown sugar, maple syrup, eggs and vanilla. Fold in the flour, salt, baking powder, baking soda and pumpkin pie spice. Then fold in the quinoa, oats, cranberries and walnuts.

Spoon into a nonstick mini muffin pan (you may need two pans-recipe makes roughly 36) and bake for 10 minutes.

Remove pans from the oven and let them cool for about 5 minutes before removing the bites to a wire rack.

I stored some in the freezer. They're great if you set them in the fridge to thaw overnight, then pop them in the oven at 350 F to warm up for about 10 minutes. And I also stored some in the fridge.
