Combine dry ingredients in a bowl and rub on a 3 - 4 lb.

Once the rub is applied place pork roast in a large bowl or container then cover with foil and refrigerate 10-24 hours.

After allowing roast to refrigerate for the desired time remove and place it in a large roasting pan with a rack and put 3 cups of apple juice and 2 cups of water in the bottom of the pan.The rack will keep the roast elevated above the liquid in the pan while cooking.

Cover the pan very tightly with foil and cook in a 300 degree oven for 5 hours.

After 5 hours remove foil then cook for an additional 30 minutes.

After 30 minutes allow pork roast to rest at least 10 minutes then transfer to a bowl and shred with two forks then moisten shredded meat with desired BBQ sauce and serve on buns.

If preferred an outdoor smoker could be used instead of the oven just place the apple juice and water in the drip tray at the bottom of the smoker and the roast on the rack inside the smoker and cook on approximately 300 degrees for 5 hours.
