Potato Cauliflower Soup – a delicious recipe with oil, onion, dill, thyme, head cauliflower, stock. Easy to follow and perfect for any occasion.

3 Tbsp. oil
2 c. chopped onion
2 tsp. dried dill
1 tsp. dried thyme
1 medium head cauliflower
6 c. stock or water
4 c. diced, unpeeled potatoes
4 bay leaves
1 tsp. salt
1/4 tsp. pepper
1 Tbsp. tamari (soy)
1 c. heavy or whipping cream
4 Tbsp. flour
1/2 c. parsley

Saute onion, dill and thyme in oil.

Add cauliflower, potato and stock.

Cover and cook until tender, about 30 minutes.

Remove from heat and blend in blender.

(I use 2 cups measuring cup as a scoop and blend 2 cups at a time, pouring mixture right back into the pot.)

Repeat until all large pieces are blended.
