Put sesame oil, salt, soy sauce, mirin, sake (optional) and ground pork in a bowl.

Wash and slice scallions thinly (using both green and white) and add to bowl with pork mixture.

With a micro plane, grate garlic and ginger into bowl of pork.

Mix all the pork ingredients together until well combined.

In a large skillet, heat the vegetable oil over medium high heat until warm.

Add the pork to the skillet, cooking until brown and breaking up as you go.
