Preheat oven to 350 degrees. Put butter in a 9x9 inch pan and place in the oven until melted. Stir in 1/4 cup sugar. Place apple slices on the butter-sugar mixture, sprinkle with nutmeg, and walnuts or pecans if desired. Set aside.

Whisk together eggs, milk, 1 Tbsp sugar, vanilla and salt. Pour over bread cubes, allowing the bread to soak up the egg mixture. Spoon bread cube-egg mixture over the apples, gently patting into place. Bake for 30 mns, Allow to cool for 3 to 4 minutes. Run a knife around the edge. Either invert pan and cut into serving squares, or individual pieces can be inverted onto plate.

Serve with maple syrup or Cinnamon Syrup (see recipe.) Dollop of plain yogurt is surprisingly FABULOUS.
