Pine Nut Macaroon Cookies

   Heat oven to 325u00b0.

   Line a cookie sheet with foil.

   Beat almond paste, sugar, egg whites and lemon peel until smooth.

   With wet hands, form dough into 1-inch balls.

   Press balls flat (half dollar size) into pine nuts.

   Place 1 inch apart on cookie sheet. Bake 20 to 25 minutes or until golden brown in oven at 325u00b0. Yields 3 to 4 dozen.
