For the cake mixture, cream 7 tbsp of the butter and 1/4 cup of the sugar with a fork until light and fluffy. Stir in the 3 egg yolks. In a separate bowl, sift together 1 cup of the flour and the baking powder, then stir into the butter mixture. Stir in the milk. In a third bowl, whisk the 3 egg whites in a bowl until they form stiff peaks, then gently stir in 1 tsp of the sugar. Fold into the bowl with the other ingredients. Preheat the oven to 375u00b0F.

Grease and flour a 10 inch square cake pan. Pour in the cake mixture and smooth the surface with a knife. Bake for about 12 mins.

For the cheesecake mixture, mix together the cream cheese, sour cream, 1/4 cup of sugar, cornstarch, 3 eggs and the caramel until smooth. Spread on top of the cake then return to the oven for 15 more mins.

Meanwhile, to make the crumble, blend 5 tbsp of butter with 1/4 cup of sugar, then sift in the remaining flour and mix in the remaining egg. Bring together with your hands to create a dough, then break into small chunks.

Take the cake out of the oven again and layer with the orange segments, then the crumble. Return to the oven to bake for 30 more mins. Cool on a wire rack. To serve, carefully remove from the pan, and cut into square pieces. Drizzle with caramel sauce.
