In a small bowl, combine the flour, oats, brown sugar, granulated sugar, cinnamon, salt and baking soda and mix until combined. Add the egg and vanilla and mix to combine. Pour in the olive oil and mix until combined.

Scoop the dough by rounded tablespoonfuls onto the prepared baking sheet. Bake in the preheated oven for 9-10 minutes until the cookies are just lightly browned on the edges. Remove from the oven and cool for 5 minutes on the cookie sheet. Transfer to a wire rack to finish cooling.
