1 (6 to 8) pound turkey breast, remove bones
1 cup Latin Spice*
1/4 cup chopped cilantro
1/4 cup chopped flat parsley
3 tbs chopped lemon thyme
1 tb sea salt
1 tb fresh pepper
1/2 cup pistachios
1/2 cup butter
Latin Spice
4 Tablespoons Garlic powder
4 Tablespoons Onion powder
2 Tablespoon Paprika
4 Tablespoon Chili Powder
2 Tablespoon Cumin

Preheat the oven at 350 degrees F.

Place the butter, herbs and pistachios in a food processor until smooth.

Place the herb/butter mixture in between the skin and the flesh, making sure to cover the entire breast.

Season the breast with the Latin Spice, salt and pepper.

Cover loosely with aluminum foil for 1 1/2 hours then uncover until cooked through and golden brown.

Place the breast in a rack inside a roasting pan and bake for 2 to 3 hours or until the internal temperature reaches 180 degrees (this will depend on the size of the breast and the oven used).

Once the breast is cooked, remove from the oven and let rest for 5 to 10 min. Slice and serve.
