Heat the Oil in a large frying pan on a medium to high heat, add the garlic and cook gently until it is just starting to tint, stir in the dry spices and cook for 1-2 minutes then add the chopped tomatoes, stir and cook gently for 2 - 3 minutes.

Meanwhile pat the Prawns to remove any excess water then add them to the pan stirring until they just start to turn pink, throw on top the roughly chopped spinach and pop a lid on to enable the spinach to wilt for 2 - 3 minutes over a medium heat then stir.

Meanwhile pop some fresh flatbreads in the oven for a couple of minutes or plate up the rice. Add half the chopped fresh Cilantro to the prawn mixture along with the salt and pepper, stir through then serve with a wedge of lemon on each plate and sprinkle over the remaining cilantro and finely chopped spring onion
