6 each egg yolks
2 tablespoons scallions, spring or green onions chopped, scallions, white parts only, or to taste
1 teaspoon sesame oil
1/4 teaspoon monosodium glutamate optional
1/4 teaspoon salt
⅛ teaspoon white pepper
1 cup lard for deepfrying
5 tablespoons soy sauce, tamari
3 tablespoons vinegar

Steam the fish for 10 minutes and flake it gently.

Fry tablespoons of the mixture in fairly deep fat, until the sides are almost brown or pinkish gold.
