Combine all ingredients in large bowl and mix thoroughly with hands until mixture is smooth.

Grease 9 x 13-inch pan with olive oil.

Shape meat mixture into an oblong dish with rounded top. Only the bottom of the meat loaf should be touching the pan.

The sides and the top should be free to crisp.

Preheat oven to 375u00b0 and bake the meat loaf for 1 1/4 hours.

Slice each square piece of cheese in half to form eight triangles.

Starting in the middle, on top of the meat loaf, lay the pieces of cheese so that they overlap each other and the pointed sides go to the ends (4 pointed one way and 4 pointed the other way).

Put back in the oven so that the cheese melts.

Serve hot with mashed potatoes and gravy and your choice of vegetables and hot rolls.
